The California Grilled Cheese with Avocados

Cheese. I?ve been in love with cheese all my life. When I was a wee tot, living in Iran, every morning I ate my lavash (flat bread), feta and jam. This was all the cheese I knew. Things changed when we came to the U.S. and moved to Texas. I became one of many elementary school kids who took my lunch to school everyday. It was always a sandwich. And the cheese was always Kraft Singles.

My mom would pack my lunch every morning, until I fired her. I took over the sandwich-making in my family early on, even making some for my brother. It was simple in the beginning, Two layers of meat with some Kraft American cheese in between. When I was allowed to wield a knife, I learned to cut little green olives in half and I would line the entire side of my mayo-laden white bread with them. Yes, I said white bread. <Gasp!>?Whole wheat? Never heard of ?fiber? when I was growing up.

Grilled cheese sandwiches were even simpler back then: bread, mayo, cheese. Done.

As I got older, the sandwiches got more complicated. I discovered hoagie rolls. I would fold my meat to add height to my sandwiches, like at the deli. Then lettuce, tomatoes and some Italian salad dressing would be added to the mix. But one thing would never change: I always had my Kraft American cheese.

Quite frankly, I didn?t know other cheeses existed! It wasn?t until college that the world of cheese truly opened up to me, and I dove in ? head first. But, in my apartment, despite all the choices, there was always a pack of Kraft singles in the fridge. Honest truth. I attended the University of Arizona, in Tucson. And it got hot there, real hot. After biking home from class, I?d cool off with a large glass of ice water, and my favorite comfort food: two slices of bread with mayo and my cheese. I suppose it was the anti-grilled cheese, to combat the triple-digit weather I was living in. But it always hit the spot.

Now that I have kids, I tend to over-compensate with their lunches. I have made many different varieties of gourmet sandwiches, but my kids weren?t big on them. They prefer meat rolls with cheese slices and fruit. Definitely a healthier alternative than what I had growing up!

A favorite after-school snack in our house is cheese with whole-grain crackers or apples.

And the grilled cheese has evolved with the times, too. Whole grain wheat bread (high in fiber, course) has replaced the white bread. I also like to add a some sweet summer tomatoes or creamy avocados. I?ve even been known to throw some pepperoni slices in there, too. To make them healthier, I toast the bread with the cheese in the toaster oven. No greasy fingers, less fat, but still gooey.

NEW YORK, May 24, 2012 Researchers at NYU School of Medicine have, for the first time, identified a single gene that simultaneously controls inflammation, accelerated aging and cancer.

"This was certainly an unexpected finding," said principal investigator Robert J. Schneider, PhD, the Albert Sabin Professor of Molecular Pathogenesis, associate director for translational research and co-director of the Breast Cancer Program at NYU Langone Medical Center. "It is rather uncommon for one gene to have two very different and very significant functions that tie together control of aging and inflammation. The two, if not regulated properly, can eventually lead to cancer development. It's an exciting scientific find."

The study, funded by the National Institutes of Health, appears online ahead of print today in Molecular Cell and is scheduled for the July 13 print issue.

For decades, the scientific community has known that inflammation, accelerated aging and cancer are somehow intertwined, but the connection between them has remained largely a mystery, Dr. Schneider said. What was known, due in part to past studies by Schneider and his team, was that a gene called AUF1 controls inflammation by turning off the inflammatory response to stop the onset of septic shock. But this finding, while significant, did not explain a connection to accelerated aging and cancer.

NEW YORK, May 24, 2012 Researchers at NYU School of Medicine have, for the first time, identified a single gene that simultaneously controls inflammation, accelerated aging and cancer.

"This was certainly an unexpected finding," said principal investigator Robert J. Schneider, PhD, the Albert Sabin Professor of Molecular Pathogenesis, associate director for translational research and co-director of the Breast Cancer Program at NYU Langone Medical Center. "It is rather uncommon for one gene to have two very different and very significant functions that tie together control of aging and inflammation. The two, if not regulated properly, can eventually lead to cancer development. It's an exciting scientific find."

The study, funded by the National Institutes of Health, appears online ahead of print today in Molecular Cell and is scheduled for the July 13 print issue.

For decades, the scientific community has known that inflammation, accelerated aging and cancer are somehow intertwined, but the connection between them has remained largely a mystery, Dr. Schneider said. What was known, due in part to past studies by Schneider and his team, was that a gene called AUF1 controls inflammation by turning off the inflammatory response to stop the onset of septic shock. But this finding, while significant, did not explain a connection to accelerated aging and cancer.

Google Updates Search App for iPhone, iPad

Google Search iOS app Google appsGoogle has released a new version of its iPhone search app, boasting a revamped interface, full screen image searches and improved search speeds.

The update makes app pages load faster and increases the speed with which autocomplete search suggestions appear.

Google's interaction designer, Noah Levin, claimed that the update means results will update with each letter added, though we still saw a slight delay when typing in a blog post announcing the launch of the application.

The app also makes viewing multiple pages easier, adding a swipeable menu at the bottom of its user interface that lets you easily switch between open web pages.

The feature extends to its search categories, meaning users can swipe to move between search, image and map modes.

Google has enhanced the app's voice command support, letting users search the web orally. In our initial tests the feature worked well, with the service easily understanding all our requests, no matter how obscure.

The update also makes searching for images much easier, so that rather than rows of thumbnail images, pictures now load as a full screen grid, letting you tap an image to get additional details on it and swipe through the search results.

The app also comes with a save option, letting users download the selected image simply by holding down on it.

The search service also adds Google apps onto Apple's iOS, housing a link to other services like Gmail, Calendar, Docs, Google+, YouTube, Blogger. The apps arrival follows speculation that Apple is planning to add Google Maps in its next major iOS overhaul.

DNA on beer can needle 'likely' belongs to Clemens

WASHINGTON (AP) ? A needle stored with a beer can appeared to contain an extremely tiny amount of Roger Clemens' DNA, which turned out to be good news and bad news for both sides in the perjury trial of the seven-time Cy Young Award winner.

A forensic scientist on Friday linked Clemens to cotton balls and a syringe needle saved from an alleged steroids injection 11 years ago. His testimony, laced with statistics and probabilities, was one of the last pieces of the government's case in its effort to prove that the pitcher lied to Congress in 2008 when he denied using performance-enhancing substances.

Under cross-examination, Clemens' lawyer tried to poke holes in the physical evidence. He got the expert to acknowledge there were "hundreds of thousands" of white males in the United States who could be a match for the scant amount of DNA found on the needle, and that it's "conceivable" the cotton balls could have been contaminated by beer and saliva.

Prosecutors had hoped to wrap up their case heading into the long holiday weekend as the trial reached the end of its sixth week, but the DNA expert's testimony took much longer than expected. U.S. District Judge Reggie Walton then ended the session a half-hour early when one of the jurors learned that her mother had died.

The judge said he doesn't expect the juror, a woman who works in law enforcement with the local public transportation authority, to return. Two jurors have previously been dismissed for sleeping, and another departure would leave only one alternate in a trial expected to last at least two more weeks.

The government's key witness, longtime Clemens strength coach Brian McNamee, says he injected Clemens with steroids in 1998, 2000 and 2001 and with human growth hormone in 2000. He said he kept the needle and other waste from a 2001 injection and stored it in and around a beer can in a FedEx box in his home for more than six years before turning it over to federal investigators.

Alan Keel of Forensic Science Associates told jurors that the DNA found on two cotton balls was "unique to one person who has ever lived on the planet" ? Clemens. He said that one of the cotton balls had a random match possibility of one in 15.4 trillion for Clemens' DNA, and the other was one in 173 trillion, when compared to the population of white people in the U.S.

But the needle was not as conclusive. Keel was able to detect only six to 12 cells for testing when he examined it. A drop of blood, by comparison, contains up to 30,000 cells.

The match: one in 449 for Clemens.

"That means that Mr. Clemens is the likely source of that biology," Keel said.

Knowing that the defense would attempt to undermine the integrity of the evidence, prosecutor Courtney Saleski asked: "Is there any way to fake this?"

"No," said Keel, shaking his head. "If this were contrived, I would expect to obtain much more biological material."

In other words, it would have been extremely difficult for anyone, including McNamee, to purposely contaminate the needle because it contained such a minute amount of human residue.

During cross-examination, Clemens lawyer Michael Attanasio attacked the findings in several ways. He pointed out that Keel was being paid by the government. He pointed out that Keel didn't test all of the items available. He pointed out that the DNA had degraded over time. He noted that 449 was a "far, far smaller number" than the other numbers in the trillions, and it therefore can't be said with uncontested certainty that the DNA on the needle belongs to Clemens.

Attanasio got Keel to agree that the Clemens blood found on one cotton ball appeared to be from the aftermath of an injection, but that the Clemens puss on the other cotton ball "is not from an immediate injection site." The lawyer also suggested the blood on the cotton ball might not have come from an injection at all: "Is it not at all uncommon for a pitcher to have a little blood blister at the end of his finger when he was pitching?"

Attanasio further implied that residue beer and saliva inside the can could have soaked the cotton balls. Keel said that was "conceivable" and "not implausible," but he added that the appearance of the cotton balls would have reflected the contamination.

"You would have a big, diffuse mess," Keel said.

Saleski picked up on that point in her follow-up questioning.

"Did you see any evidence that these cotton balls were exposed to a bunch of beer?" she asked the witness.

"Not really, no," Keel said.

Keel also re-emphasized his opinion that the minute sample of DNA on the needle could not have been manipulated or put there "by design."

"It would be virtually impossible," Keel said.

The needle naturally caught the attention of the jurors, who submitted multiple questions for the judge to ask the witness about the one-in-449 ratio.

"There's the rub," said Keel as he explained again that the results were compatible with Clemens ? but couldn't be considered a conclusive match.

Clemens' lawyers have maintained all along that a beer can is no way to store evidence. During the questioning of Keel, the government decided to emphasize that point, too, inferring that if McNamee had truly intended to keep the needle and cotton balls with the intention of implicating Clemens, he would have found a more sterile place for it. McNamee has said he kept the evidence to placate his wife, who was concerned he would take the fall if his involvement in performance-enhancing drugs ever came to light, and that he had no plans to make it public.

Keel also found a gauze pad and tissue that matched McNamee's DNA to an even greater probability than the Clemens matches. McNamee has said he would sometimes accidently cut himself while opening small glass containers of steroids before injecting Clemens.

The gauze pad match was 1 in 1.8 quintillion people for white Americans.

A quintillion has 18 zeroes in it.

It is with great dismay that we find it necessary to once again point out that you have made false statements of fact in the Journal Inquirer regarding the business of WWE, this time in your column on Monday, May?21, 2012. That article clearly was intended to state that WWE is a ?business of violence, pornography, and general raunch.? This is now at least the second time you have made false statements that damage our corporate reputation, and the second time you have stated that WWE is involved in pornography. As we pointed out in our letter on February 2, 2012, following your initial libel, your position as managing editor would ethically require you to report the facts and not distort the truth. That you would repeat the false statement that WWE is in the pornography business, after being told of the falsity of that statement, is especially strong evidence of malice.

With regard to your statement on May 21 that WWE is a ?business of violence,? WWE programming, like Hollywood movies and Broadway shows, is an exciting blend of action, characters and fictional storylines of good versus evil entertaining millions every week, including approximately 300,000 fans here in Connecticut. Our performers are professionals who have spent many years training to perfect the athletic and choreographed maneuvers on our shows. Your assertion that our content is violent is in direct conflict with the standards and practices departments of our current TV network distributors who have rated our programming TV-PG. We would also note that your prior writings prove that you know WWE is not in the business of actual violence, as your own words in your prior January 28, 2012, article previously described our business as involving ?mock violence.?

With regard to your false statement that WWE is in the ?business of pornography,? which you have now stated twice, that statement is categorically false and especially malicious. Simply put, WWE has never been in the pornography business. As we previously advised you on February 2, 2012, when you first libeled WWE by such statements, our broadcast programming is TV-PG and has always appeared on basic cable or broadcast television. As any casual television viewer knows, based on the Federal Communications Commission?s rules alone, WWE?s programs would not be permitted on broadcast television or basic cable if in fact they were pornography. WWE is family entertainment. In fact, 40 percent of the millions of fans who attend our live events bring their children. Apart from being completely false, it is insulting to these parents to think that they would take their children to view what you falsely assert is pornography.

Our company started with 13 employees 30 years ago and has grown to nearly 700, which speaks to the quality and staying power of our product and our organization. WWE may not be your personal choice of entertainment, but that does not give you the right to make false statements of fact about our business which willfully damages our corporate reputation.?

Accordingly, WWE hereby demands a retraction in the Journal Inquirer by June 4, 2012, in as public a manner as that in which you made these false statements. Should you fail to issue the retraction, we will seek legal and all available remedies.

Drunk birds had one-too-many berries to blame

After overindulging in berries, flocks of cedar waxwings flew drunkenly to their doom. That's the conclusion of a new report in the Journal of Ornithology.

Cedar waxwings have evolved to live on a diet that averages 84 per cent fruit. But those evolutionary innovations backfired on several occasions between 2005 and 2007 when flocks of them died after crashing into windows and fences in broad daylight in the Los Angeles area.

Residents puzzled by the deaths sent the bodies to the California Animal Health and Food Safety Laboratory in San Bernardino. Necropsies performed by Hailu Kinde and colleagues at the lab showed the birds had been healthy when they gorged on berries from the Brazilian pepper tree, then died from ruptured livers or other traumas caused by the collisions.

Flocking hell

Cedar waxwings have the most fruit-rich diet of all North American birds, and dining on overripe berries can leave them visibly tipsy. Their short intestines can process large volumes of fruit, and their large livers ? about 5 per cent of body mass ? can break down toxic ethanol before it causes serious damage.

Yet although earlier studies had found isolated birds that had died from collisions when flying drunk, no one had seen whole flocks careen to their doom.

Now Kinde and colleagues report that the downfall of the flocks came from eating too many berries. Lacking a crop ? the expandable pouch near the throat used to store food ? waxwings stow meals in a distensible oesophagus. "When the fruit stays in the oesophagus, it ferments and produces ethanol," says Kinde.

The waxwings had ingested so many berries that their large livers "could not keep up with the alcohol produced by the fermentation", with ethanol concentration as high as 1000 parts per million. By the time they finished stuffing themselves with berries, they were too drunk to fly safely.

Obama should attack what Bain and JPMorgan have in common

Rather than lobbing generalized? attacks at Mitt Romney and American business, Obama should attack a particular kind of capitalism that Romney and JPMorgan both practice: using other peoples? money to make big bets which, if they go wrong, can wreak havoc on the economy.

That way his so-called ?attack? on private equity is neither a personal attack on Mitt Romney nor a generalized attack on American business.

It?s an attack on a particular kind of capitalism that Romney and JPMorgan both practice: Using other peoples? money to make big bets which, if they go wrong, can wreak havoc on the economy.

It?s the substitution of casino capitalism for real capitalism, the dominance of the betting parlor over the real business of America, financial innovation rather than product innovation.

It?s been terrible for the American economy and for our democracy.

It?s also why Obama has to come out swinging about JPMorgan. The JPMorgan Chase debacle would have been prevented if the Volcker Rule were sufficiently strict, prohibiting banks from using commercial deposits to make bets except very specific offsetting bets (hedges) on narrow classes of trades.

But Jamie Dimon and JPMorgan have been lobbying like mad to loosen the Volcker Rule and widen that exception to include the very kind of reckless bets JPMorgan made. And they?re still at it, as evidenced by Dimon?s current claim that the rule that eventually emerges would allow those bets.

As a practical matter, the Volcker Rule is hopeless. It was intended to be Glass-Steagall lite ? a more nuanced version of the original Depression-era law that separated commercial from investment banking. But JPMorgan has proven that any nuance ? any exception ? will be stretched beyond recognition by the big banks.

So much money can be made when these bets turn out well that the big banks will stop at nothing to keep the spigot open.

There?s no alternative but to resurrect Glass-Steagall as a whole. Even then, the biggest banks are still too big to fail or to regulate. We also need to heed the recent advice of the Dallas branch of the Federal Reserve, and break them up.

At the same time, there?s no point to the ?carried interest? loophole that allows private-equity managers like Mitt Romney to treat their incomes as capital gains, taxed at only 15 percent, when they?ve risked no money of their own.

If private equity were good for America it wouldn?t need this or the other tax preference it depends on, elevating debt over equity. But the private equity industry has huge political clout, which is why these tax preferences remain.

Get it? Bain Capital and JPMorgan are parts of the same problem. The President should be leading the charge against both.
